This creamy garlic chicken with spinach and cherry tomatoes is rich, comforting, and packed with protein — while still feeling fresh and balanced. It’s a simple one-pan meal that looks impressive but takes less than 30 minutes to make.
Ingredients (1–2 servings)
2 chicken breasts (ca. 300g)
1 tsp olive oil
2 cloves garlic, minced
100 ml chicken stock
100 ml cooking cream (or light cream)
30g parmesan (optional)
1 large handful fresh spinach
8–10 cherry tomatoes, halved
Salt & pepper
1 tsp paprika
Optional: chili flakes
Instructions
- Season chicken with salt, pepper, and paprika.
- Heat oil in a pan and cook chicken 5–6 minutes per side until golden.
- Remove chicken and set aside.
- In the same pan, add garlic and cook for about 1 minute, stir constantly so the garlic doesn’t burn.
- Pour in chicken stock and let simmer 2–3 minutes.
- Pour in cream and let it simmer for an additional couple of minutes.
- Add spinach and let it wilt into the sauce
- Stir in cherry tomatoes and cook for 1–2 minutes (keep them slightly fresh)
- Add parmesan and stir until smooth
- Return chicken to the pan and let everything simmer together for a few minutes

Tips
