These pistachio energy balls are naturally sweet, slightly chewy, and coated in finely chopped pistachios for that beautiful green finish. Made with soft dates, nuts, and creamy peanut butter, they’re the perfect quick snack, post-workout bite, or a healthier treat with coffee.

They require no baking and come together in just 10 minutes.

Ingredients:

(Makes 12-14)

1 cup soft pitted dates (160 g)
½ cup natural peanut butter (125 g)
½ cup raw almonds (70 g), roughly chopped
½ cup raw cashews or walnuts (65 g)
¼ tsp sea salt
1–2 tbsp water (15–30 ml), if needed
½ cup shelled pistachios, very finely chopped (60 g), for coating

Instructions:

  1. Add dates, almonds, and cashews to a food processor. Pulse until finely ground and sticky. (Soak the dates in hot water for a few minutes before mixing, if they are hard)
  2. Add peanut butter and salt. Blend again until the mixture forms a thick, slightly sticky dough.
    If it feels too dry, add 1 tablespoon water at a time until it holds together when pressed.
  3. Scoop about 1 tablespoon of mixture and roll between your palms into smooth balls.
  4. Finely chop the pistachios (almost crumb-like).
    Roll each ball in the chopped pistachios, gently pressing so they stick evenly.
  5. Place in the fridge for 30–60 minutes to firm up.
