This fresh and colorful tuna poke bowl is packed with flavor, texture, and feel-good ingredients. Tender sushi rice is topped with sashimi-grade tuna, sweet mango, juicy tomatoes, and finished with chili mayo, pickled ginger, and toasted sesame seeds. Perfect as a light lunch or easy dinner.

Ingredients
Sushi Rice
- 1 cup sushi rice
- 1½ cups water
- 2 tbsp rice vinegar
- 1 tsp sugar
- ½ tsp salt
Poke Bowl
- 250–300 g fresh tuna, sushi-grade, cut into cubes
- 1 ripe mango, diced
- 1–2 tomatoes, chopped (or cherry tomatoes, halved)
- 2 spring onions, thinly sliced
- Pickled ginger, to serve
- 1–2 tbsp roasted sesame seeds
- 1 avocado, pitted and cut into chunks
Chili Mayo
- 3 tbsp mayonnaise
- 1–2 tsp sriracha or chili sauce (adjust to taste)
- Optional: a squeeze of lime juice

Instructions:
- Cook the sushi rice: Rinse the rice under cold water until the water runs clear. Cook with water according to package instructions.
While still warm, gently mix rice vinegar, sugar, and salt into the rice. Set aside to cool slightly. - Prepare the chili mayo: Stir together mayonnaise and chili sauce (and lime juice if using). Set aside.
- Prep the toppings: Dice the tuna into bite-sized cubes. Cut mango, tomatoes, avocado and slice spring onions, and set everything out ready for assembly.
- Assemble the bowl: Divide the sushi rice between two bowls. Top with tuna, mango, tomatoes, and spring onion.
- Finish & serve: Drizzle with chili mayo, sprinkle with roasted sesame seeds, and add pickled ginger on the side.
